This recipe for Black Bean, Edamame and Wheat Berry Salad is from the POMPEIAN OIL website. This was my first time working with Wheat Berries (unprocessed wheat kernels). I really liked how they filled out the colorful salad.
Whenever I make a salad with chopped tomatoes - I always use a ROMA tomato. The seeds of this variety of tomato are easily removed. I think only using the tomato flesh, helps to keep salads from getting too watery.
